I just looked at my blog and realized that it has been almost a week since I posted last. What can I say, but the Easter festivities were all consuming. :-)
Little girl got sick the day before we were supposed to go to an early Easter dinner at Dave's parents house and she started throwing up. Yay. Baby Boy was teething all week and had the poo-poo ca-choo blow-outs to prove it. And the smell......please don't get me started.
Little Girl recovered fairly quickly although she was still quite clingy through the weekend and ate like a bird. She did manage however to find a way to work just a few pieces of candy in though. Mama didn't let her have much since she had been heave-hoeing and all and she was barely swallowing any other foods containing proteins, carbs or nutrients, so....
We headed up to my family's house once LG was in the clear and we felt it was worth the 3 hour drive to get up there. We had a great weekend with everyone and enjoyed celebrating the resurrection of Christ and our big Easter dinner and Egg Hunt.
I was asked to bring a side dish. My friend Carli from Indiana would always make this amazing avocado and black bean salsa concoction that would make my taste buds sore. And the best part was - it didn't make my waistline sore. In fact - GASP - it's kind of healthy.
It was a huge hit and everybody raved about it and wanted the recipe. So, with that, I am sharing it with you all too because I just made a little 1/2 recipe for myself today since my man is traveling and I was craving it. Here's to starting your cravings too!
Enjoy!
1 can black beans - rinsed and drained
1 can corn - rinsed and drained
3/4 cup chopped red onion
3 - 4 Roma tomatoes - seeded and chopped
2 avocados - chopped
1 pkg. italian dressing seasoning packet
1/4 C vinegar (white)
1/2 C oil (olive or canola)
Mix all together - add avocados last and put them in right before you serve it.
Serve with veggies or tortilla chips

I miss eating so much since doing this crazy diet, that even your nasty recipes are sounding good to me. :)
don't forget you can put it on a burger too!
