I had so much fun with the kids on Valentines Day. David and I had already had our date night a few days before where we ate a lovely dinner at Tong's Thai Restaurant and we also saw the movie "The Vow". My review is that I loved, loved, loved the first half, and then felt the second half was super depressing. Then, the end seemed to come to a very abrupt halt. My understanding is that people either loved it or hated it. Anyway - we polished the night off by flopping on the couch after kids were fast asleep, and shared some Ben & Jerry's Coffee Heath Bar Crunch Ice Cream. That's love baby. :-)
So, back to the kids. I made some fun heart shaped pancakes that were pink for breakfast. I made them each a cute little bento for lunch that was filled with oodles of love.




I made them pb&j cut into little heart shapes, added some pink strawberry yogurt with heart sprinkles, heart shaped strawberries, pink iced animal crackers, blueberries for the boy and popcorn with a few valentines m&m's added in for fun. They were thrilled with their bentos for the day. I got pooped out by dinner time and decided to purchase a heart shaped pizza from Papa Murphy's for a whopping $6. Daddy had brought us all some chocolate dipped strawberries from Edible Arrangements and they were amazing. We finished it off with a scavenger hunt for the kids. They found notes that I read to them and they ran all over the house to find all their dollar store goodies. Then - their last present was a new Game for each of their Leapsters. Super fun night!
Wow - That was lengthy. Didn't I mention a list format? Good grief. O.K.
I haven't been blogging as much food stuff lately because I have been busy losing 11 lbs. and trying not to entice myself with recipes involving cream sauce and chocolate for dessert. Restraint! Restraint! I have still been eating really well and enjoying my food, but I've been trying a lot of things out from Weight Watchers. I also discovered a site that has some amazing dishes, AND the blogger lists all the W.W. points for every serving. I am in heaven!! I kind of peruse her site each week looking for new ideas. One of the things I made last week that we enjoyed was cauliflower fritters. The blog is called Skinny Taste, and like I said, I have been perched on her site quite often. I will post more about the fritters over at The Recipe Box this week.
Me and David just got back from the most amazing conference last week. My hubby and his best buddy John-Erick were 2 of the main organizers of this conference and the sole purpose was to talk to Pastors and leaders and individuals wanting to start compassion ministries in their church and in their community. We had some amazing speakers there to impart their insightful and sometimes hilarious wisdom on us. I have never laughed so much and been equally inspired to LOVE my community and the people around me in a long time. It was nothing short of awesome. Some of the speakers included Tommy and Matthew Barnett, Dino Rizzo, Mark Batterson, Christine Caine, Samuel Rodriguez, Rich Wilkerson and many others. Wow is all I could say after it was all over. I have 2 things that I am wanting to start getting involved in. I will share those in more detail this week. These men and women are DOING compassion work where they live every day. They are loving. They are people of prayer. They are inspiring. I hope to share some of what touched me and maybe it will spark something in your heart as well!
Last bragging point and then I'll stop yapping until tomorrow where I hope to share my Menu Plan Monday with you.
I'm so proud of my daughter. She is a true little artist and has so much creativity in her sweet little body. David had shared his design ideas with his sister who was helping with designing the banners and other print pieces for the conference. He was talking out loud about what he wanted for the banners. Little Girl immediately piped up - with total confidence - and said "oh, daddy. you need artwork? I can make something for you right now. I'll help you out!" Without skipping a beat - Daddy said "o.k. babe. You draw something up and I'll work it into the print pieces for the conference." She immediately ran to her craft closet and told us she had an idea. She asked David to help her draw a heart. She proceeded to cut it out and wrote the words "God is Love" in the center. She asked David for the scripture reference and wrote that on the bottom. She said she wanted everyone at the conference to know that "God is love" so they wouldn't forget. It was so perfect for the conference and the heartbeat of everything we were trying to voice that whole week in Louisiana, that we took a picture of her art and sent it off to her Auntie who incorporated it into all the major pieces that we all got to see our whole week at The Healing Place Church.


It made me smile every time I walked by the signage. We emailed her the pics (she and Baby Boy were back home with my parents) and I think it made her feel great.
