It's Monday. It's laundry day, and my dryer seems to be running slow today and I think my washing machine has soapy build-up in it. Ewww. That's considered DRAMA in a mom's world.
I just put both kids to bed for a nap, so my time is limited to be on here since I need to kinda be productive today. :-) So - without further ad-oooo. Here's the Apple Muffin Recipe.
!/2 cup sugar
1/4 cup butter
1 egg
1 cup milk
2 cups flour
1/2 tsp salt
2 tsp. baking powder
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp nutmeg (optional)
1 1/2 cups peeled, chopped apples
Topping:
1/4 cup brown sugar
1 tsp cinnamon
Cream together sugar and butter: Add egg and beat well. Stir in milk. In another bowl, combine flour, salt, baking powder, and spices. Add egg mixture to flour mixture and blend until just moistened. (Batter will be lumpy.) Add apples to batter and blend carefully. Fill well-greased muffin tin. Sprinkle with sugar-and-cinnamon topping. Bake at 400 degrees for 20-25 minutes, until golden brown. Makes 1 dozen muffins.
Oh, and shockingly, with all the baking and such, I've managed to maintain control and stick to my W.W. plan. I'm down 9 lbs. Let's celebrate! Woo! Woo!
